Norouz is the Persian New Year. It means a new day and marks the first day of spring. Norouz begins at the exact moment of the spring equinox and it is celebrated in many countries around the world from the Balkans to the Caucuses and the Middle East. The exact time of the spring equinox changes every year. Friends, family and loved ones gather around the 'Haft Seen' for the countdown to Norouz. At the exact moment of Norouz they all exchange hugs and kisses. The older members of the family give the younger ones money as gifts. Traditionally people eat specially prepared rice with aromatic herbs and fish on the first day of Norouz.
Sofreh Haft Seen' is a traditional arrangement of symbolic items to mark the Persian New Year. 'Haft Seen' means seven Seens (the letter ‘S' in Farsi). There are seven ‘must have' items. all starting with the letter 'S'. Iranians prepare the Haft Seen before the arrival of New Year. On the day of Norouz the family gather around the carefully arrranged items and wait for the exact moment of the Spring Equinox. The Haft Seen is kept for 13 days after Norouz.
