A monthly round-up of new hotels and hideaways, treks and tours.
On 1 May Alta Vista Suites opened on the Greek island of Santorini with three seaside suites. The hotel, just on the edge of the village of Imerovigli, is perched above the famous caldera and built in the classic white Cycladic style.
On 2 May the Crowne Plaza Edinburgh – The Roxburghe debuted on Charlotte Square in Edinburgh’s New Town. The 198-room hotel, formerly a Macdonald Hotel, is housed in a set of 18th-century Georgian townhouses designed by architect Robert Adam, and many rooms retain period details.
The Arts Boutique Hotel B in Lima, Peru, is currently in its soft opening phase with 10 rooms available for guests. The 17-room hotel is in a carefully restored Belle Epoque mansion in the heart of the bohemian Barranco district, and contains a collection of works from local artists. The hotel officially opens at the end of June.
On 7 May the Langham Place, Fifth Avenue hotel opens in New York City. Formerly the Setai New York, the hotel has 214 rooms and suites and will partner with UK-based artists, designers and filmmakers to feature creative works in the public spaces.
On 13 May, the Mainport hotel debuts on Rotterdam’s inner harbour with 215 rooms featuring egg-shaped bathtubs and textile wall coverings. Glass elevators take guests to the quayside On the Rocks bar, while the eighth floor Spa Heaven has views of the harbour and the Erasmus Bridge.

Also on 16 May, the Hotel Vermont opens in Burlington in a LEED-certified building. The 125 rooms contain furniture made from Vermont white oak, and the hotel will have a farm-to-table restaurant, a yoga studio and locally made organic bath products. The chefs and mixologists at Juniper restaurant and bar utilise ingredients that they claim help offset the hotel’s carbon footprint.
On 29 May, a series of pop-up dinners launches at the Steenburg Hotel and Winery in Cape Town’s Constantia Valley. Throughout the summer, six of the city’s top chefs will each host an evening, creating menus paired with wines from Steenburg’s vineyards.
