  • 100g/3½oz pitted Kalamata olives
  • 12g/½oz capers
  • ¾ tsp anchovy paste
  • 4 tsp red wine vinegar
  • 1 small garlic clove
  • few sprigs fresh thyme
  • 150g/5½oz soft goats’ cheese, rind removed
  • 120g/4¼oz Parma ham
