Taleggio cheese on toast with a tomato and herb salsa



For the cheese on toast

For the tomato and herb salsa

  • 2 vine tomatoes, de-seeded and chopped
  • 1 clove garlic, finely chopped
  • 2 tbsp chopped fresh parsley
  • 1 handful fresh basil leaves, torn
  • salt and freshly ground black pepper


  1. Preheat the oven to 180C/350F/Gas 4.

  2. For the cheese on toast, toast the bread in the oven for 3-4 minutes, or until lightly golden. Lay the slices of cheese on top of the toast then grill for 2-3 minutes, or until the cheese is melted and bubbling.

  3. For the tomato and herb salsa, combine all of the salsa ingredients together in a bowl and mix well to combine.

  4. To serve, place the cheese on toast on a serving plate and spoon over the tomato and herb salsa.
