Freeze leftovers in an ice-cube tray

Freezing leftover food is a great way to reduce waste - and it makes cooking tasty food even easier.
Don't throw away leftover red wine. Boil it in a saucepan to thicken it slightly. (You can mix wine from different bottles - it will still work.) Pour into an ice-cube tray and freeze. When you are making gravy, add 1 or 2 red wine ice cubes for fantastic flavour.
If you have leftover fresh herbs, chop them and half-fill the compartments of an ice-cube tray. Add a little water and freeze. When you are cooking, drop a couple of herb cubes in near the end. As they melt you'll get lovely fresh herb flavour into your dish.
Rather than let unused vegetables go off, try cooking them and turn them into something delicious that can be frozen. It's better to cook and freeze than throw food away.
Top Tip: If you'll want to defrost just one serving at a time, then divide the food into portions and freeze them in separate containers.
