Are pop-up restaurants rescuing economy?

The UK retail environment is struggling, with many high streets containing more than their fair share of boarded-up units.

In response, one of the growing trends is for "pop-up" shops and restaurants, with owners moving in sometimes just for a few months before then moving on again.

Catherine McColl, a trends analyst at Mintel, said they had found that the appeal of pop-up restaurants was skewed towards, "younger users that are savvy with social media". She added: "Mintel research has found that two out of ten 16-34 year olds interact with a restaurant after dining there."

Chris Birchell, who runs Barnhouse Bistro, a pop up mobile street food company, said: "Ideally my dream would to open up my own restaurant at some point, but at the minute it's about getting out to as many people as we can."
